Sarah’s Tiramisu

My sister is moving to South Carolina for a couple of months and I am going to miss her so much! :-( For a going away present I decided to make her Tiramisu, which is her favorite dessert.  This is a luscious Italian dessert, made from eggs, marscapone cheese, and lady fingers.  This dessert is sooo decadent and rich and delicious; I just know that you all will love it!  It also really isn’t even that hard to make, and doesn’t require any baking…  The only downside is…. its really not healthy.  But, we all have to splurge occasionally right?!?!  RIGHT!?!?!  But anyways… here is the recipe!

Tiramisu

Ingredients:

  • 1/2 cup of amaretto
  • 1 cup brewed espresso, cooled (you can substitute strong coffee)
  • 6 eggs, separated
  • 16 oz of fresh marscapone cheese (I used BelGioioso)
  • about 34 lady fingers (I used Torino brand)
  • 1/3 cup of sugar
  • 4tbsp of unsweetened cocoa powder

Instructions:  Wash your eggs, so the shell is clean, and separate them.  I like to do this by gently cracking the eggs, and tossing the yolk between the two halves of eggshell until the white has all come out.  There are egg separators you can buy though if you have trouble with this.  Blend the egg yolks with the sugar, for about 5 minutes.  It should become like a custard.  Add the marscapone cheese in, and blend just until combined.  Set this mixture aside.

Beat the egg whites until they form stiff peaks and set aside. Combine the espresso and amaretto and stir gently.  Add 1/8 of a cup of the espresso mixture to the marscapone mixture and stir until just combined.  Gently add the egg whites to the marscapone mixture, and fold in.  DO NOT use your mixer in this step.  You want to fold this in as gently as possible.

Next, cover the bottom of a baking pan with half of the lady fingers.  Pour half of the espresso mixture over the lady fingers.  Spread half of your marscapone mixture on top of this layer.  Repeat this process one more time with the remaining lady fingers, espresso mixture, and marscapone mixture.  Sift the cocoa powder on top, and it is ready to serve!  **Please note this recipe does have raw eggs in it; so be sure to get your eggs from a reliable source and wash the shells.  ** Also note that this dessert is very perishable, and should be consumed within a couple of days, and always refrigerated.
