    As I am writing this post I am awaiting the hurricane Irma in Tampa, Florida.  I am very scared, but very grateful to be with friends as we hunker down to wait for the storm.  I hope that Tampa will not take a direct hit, and the buildings we are staying in at least keep us safe.     Hi Everyone! Today I want to share with you a very simple recipe that is perfect during lent for meatless Fridays.  My sitto (grandma in Arabic) used to make it all the time!  It is extremely easy to make, delicious, and very healthy!  This meal goes very well with any kind of pickles and also beets.  I served mine with pickled beets and baby dill pickles.  Pepperoncini peppers and pickled turnips also go extremely well with this meal.  I hope you will enjoy it!
