So chicken wings are very yummy, and there are all kinds of chicken wing recipes, but hardly any of them seem to be very healthy.  My dad likes to have chicken wings and he also really like chicken fingers.  This is a recipe that I made for him for the Super Bowl.  I hope you all enjoy!

Ingredients:
2 extra large chicken breasts (or maybe 3 normal sized ones)
1 egg
1/4 cup of milk
1 1/2 cups of panko breadcrumbs
2 Tbsp flour
2 tsp oregano
1/2 tsp extra hot red pepper flakes (omit if you would like it less spicy)
1/2 tsp ground black pepper
2 tsp garlic powder
1 1/4 cup plus a couple of good shakes of Frank’s Red Hot Sauce
3 Tbsp Butter

Instructions:  Pre-heat your oven to 375 degrees F.  Cut the chicken breasts into 1/2” strips. In a bowl whisk together the egg, milk, and a couple of good shakes of Frank’s Red Hot Sauce.  In another bowl combine the panko breadcrumbs, flour, oregano, red pepper flakes, black pepper, and garlic powder.  GREASE A COOKIE SHEET.  This is very important… I did not do this and had a lot of trouble removing the chicken from the pan.  It was really messy.  Dip the chicken strips into the egg/milk mixture, and then into the breadcrumb mixture, and place on the cookie sheet.  Once you have done this for all of the strips place the cookie sheet(s) in the oven and bake for 30 minutes.  While they are baking, combine the butter and Frank’s Red Hot Sauce, in a small pot on the stove and heat on low until the butter is melted and combined with the hot sauce.  After the chicken has baked for 30 minutes take your sheet(s) out of the oven, and pour the hot sauce mixture over them.  Bake for 10 more minutes.  After this, take your chicken strips out of the oven and enjoy!!!

Tip:  These wings are pretty spicy, which my family and I like.  For those of you who are not so keen on spiciness, leave out the red pepper flakes, and decrease the amount of hot sauce you use. Replace the hot sauce with more butter.  This will decrease the heat, but will also increase the calories/points.

Makes about 25 strips, 2 WWPP per strip
