Potato Latkes | Simply Scrumptious By SarahHi Everyone!  I recently started watching the Amazon show, The Marvelous Mrs. Maisel.  If you haven’t seen it, you really should.  Season two just came out, and it is hilarous!  Anyway, the main characters are Jewish, and they are always eating amazingly delicious Jewish food at a New York deli.  For some reason this and the fact that it is the holiday season made me CRAVE latkes.  So I decided to come up with a recipe and make my own version.  I think they came out quite well!  Enjoy!Potato Latkes | Simply Scrumptious By Sarah

Potato Latkes | Simply Scrumptious By Sarah

Ingredients

  • 5 medium/large Yukon Gold potatoes
  • 2 carrots, peeled
  • 1 onion
  • 2 eggs
  • 1/2 cup flour
  • 1tsp salt
  • 1/2 cup corn oil
  • Sour cream and apple sauce to serve with the latkes

Instructions

Shred the potatoes, carrots, and onion. I do this in the food processor and it is much easier. Stir these ingredients in a bowl so that they are evenly mixed. Place a clean hand towel on top of the mixture and press down to get as much liquid as possible. This is the key to getting crispy latkes. Add the eggs, flour, and salt and mix well.

Place enough oil in a frying pan so that there is about a 1/4 in of oil in the bottom of the pan. Heat the oil over medium heat. Once the oil is hot, start making small patties with your potato mixture and placing them in the hot oil. Do not over crowd the frying pan. Cook the latkes for about 2-3 minutes on each side, until they are golden and crispy. Serve warm and enjoy with applesauce and sour cream!
